I will also want to have one in my ano tank. I have a HVAC friend helping me deal with the cooling problems i expect to have. I expect this from reading about so many ways to cool it down.

304 Stainless is pretty poor in sulfuric acid. 316 is much better, but still is slowly damaged. If your probes are 316, and you remove them when not in use, they'll probably be fine. Maybe coat them in a thin layer of epoxy or something that's more acid resistant than stainless?
