Default Oven building question?????

I have an old ice chest that is covered with stainless steel inside and out. Sandwiched between the two appears to be foam insulation. My question is, should I remove this insulation due to it not holding up to the heat? If in needs to be removed, can I just skim the inside with backer board, would this provide enough protection? The ice chest is about 20 years old to give you an idea of the type of insulation was used during this period. In all the posts I have seen where refrigerators are used, the insulation was stripped. However, given how well made this box is I rather not rip it apart if I don’t have to.
