Personally I would suggest going as tall as you can in respect to your shop.
A few things to concider, first is the actual inside measurements. I'm building an 8' tall oven but the usable space will be far less. I'm loosing 8" from construction of the oven (Top and Bottom panels).
Then there is the room for the elements in the bottom, and the rack on top. When it's all said and done I'm guessing I'll have a usable space of about 6.5 feet.
On top of that, you will have to concider the hanger on the part your baking...
