i am using a bakery oven. yes the air circulation is too strong , different ways to solve this small problem ,you can slow down the motor , change the motor , replace or modify the fan blade or obstruct part of the air intake .
imo. once this problem solved that makes a very good curing oven ,if you have a good price on it go for it . it is a much easier way to go then to build one from scratch
note : not all comercial ovens run on the same voltage and some are single phase others are 3 phases .might have to have it rewired or buy a transformer to adapt it to your electrical supply
