Re: candy colors
all good info above. one more note on candies: they're more sensitive to thickness, temperature, and bake time. if you apply it too heavily and bake too hot, they will run. if they run bad, you will get drip formations on the bottom edges, if they run a little the coating will be noticibly heavier at the bottom edges giving a darker color. i'm still learning candies. so far every time i'm getting better. i'd recommend some test panels first.
