good idea m8, i got a beast of an angle grinder, but ad reckon about the 10" one would be an all rounder.do you have a compressor etc? as some of the air tools are great.i think getting the right attachments for the Dremel would be the way ahead for the nooks n crannies, getting the edges straight is a pain especially around the lettering.
these are the attachments i was on about last night got them off Ebay, to prolong the discs i would use better glue as the adhesive isn't too good

greaseless does take time and can be a royal pain,as you said you need to be getting your times down with out sacrificing quality.let me know how you get on at the Range with the angle grinder.
