You need an orderly approach to your build. First you need to determine if you have sufficient electrical service to provide power to an oven. Once your electrical resources are known, you can look to plan the oven size and watts requirement to heat said oven. Only then should you look to purchase SSR's, elements, controllers, etc. No one can help you by recommending components without knowing the above.

You can build an oven with 16 gauge, but I think that is thicker than required and will be difficult to bend without proper equipment. I used 24 gauge galvanized on my oven.
