It all depends on how in depth you want to get. If you're tearing down the engine, while it's disassembled, you could get it beadblasted and powdercoated. If you're just trying to freshen it up, they sell ceramic high temp paint at your local car parts shop that will stick pretty good, but probably won't match the original finish 100%.
