The sheet metal I got the first was 28ga. But it was to thin. What I got for my second oven was 22ga. I can't say 20 is too thick. I seen different gages used for ovens. As heavy as 16ga. That takes a bit longer to heat to temp, but will hold the temp longer. That's what your looking for I think. Is what you want your oven to do. So I guess that don't really answer your question for that.

As for bending the sheet, I have a 4 ft. brake, so I bent my own. But have a metal shop do it if you don't have a brake. I don't know if or what they would charge.
