The number of elements you use will be determined by the electrical service that you have. 100 or 200 amp service. If you will be running it on a 50,60 0r 100 amp breaker will be the final deciding point. Total all wattages and divide by your service voltage ie., 220 -240. That will give you total amps draw.

As for wiring schematics, there are several. Which type of controller will you be using? An SSR or the older Contact points Contactor? I have a diagram of mine, which is the Points Contactor. You would need to do a search in this forum for the SSR type.
