Brakes get a lot hotter than that momentarily. They cool off very quickly though, by design. A lot of people do powdercoat calipers. Typically just plain ol' TGIC polyester powder.
Some recommend tearing them down before coating, some recommend you don't. Personally I would so I could tell they were clean all over and inside and everything, but Some folks just flush them thoroughly with warm water and dry them out good and blast 'em. Be carefull not ot damage the pistons. Best to tape them off before blasting. They can be left in as far as I know, but it's best to remove most dust boots (the accordian part). I will now direct you to Mike on the EW forum for a more complete description of the "how to's". His handle is 2003z on that forum, and is well knwon for his Brake Caliper Business he does online. He's cool and will share with you no prob. (I think he has a Vette too).
