In theory, distilled water should all be the same and have a pH of 7.0; However, pH is "a measure of the activity of dissolved hydrogen ions" in a solution. It's hard to measure with true accuracy and the processes in the plant that provided the water can vary. An incomplete rinse after cleaning could change the pH in a holding tank. The accuracy of your measuring device and temperature can vary the pH too. I wouldn't be too concerned about the pH unless it gets below 5.0 or higher than 8.0.
Try distilling your own sample of tap water and test it's pH at 77*F. Let us know what you come up with. In theory, it should be 7.0 but I'm betting it won't be.
