As far as white and green go, it depends upon the manufacturer. With the hardware store stuff, Dico, and the other, (I forget the name), white is finer than green. With the professional quality stuff, it all depends on who made it.
I'm not casting aspersions on the hardware store stuff, by the way; I've used a lot of it with great success. The pro stuff comes in larger bars and is easier to handle, and you can get much more of a variety of compositions. I use a rough cut stainless compound that I love. It's dark gray. Cuts fast and yet leaves no visible scratches. Caswell sells a variety of good ones.
