I recently built an oven based on the designs of a few large manufaturers and I used mineral wool insulation. It has a temp rating of 2900 deg. I got it at a drywall supply house and it was relatively inexpensive. It is also known as rotten cotton in the construction trade. It was 3" thick and 2'x4'. hope this helps out.

Larger lumber yards or contracting supply houses. Usually comerial drywall contractors know where to get it.

We got ours at a local drywall supply house, along with the steel studs, very good prices!
