Today was the first time i attempting to start my oven since i started it. Everything worked great and it was a nice feeling to know all the money i spent actually led to a finished project. Although electrically is is good, i still need to mount my thermocoupler in a final position. I previously had a thread about how to install t but it led me to be even more confused. I currently have a K type. Any help would be ppreciated. That a a good source on latches that arge larger enough for my oven. Thanks in advance.

You can mount the TC about halfway up inside of a piece of pipe.
I think JTW37 had a pic of how he set his up. For the latch you can use a toggle clamp something similar to this:
