Just use two of the legs. You don't have to use all three legs and it shouldn't matter which two legs you use. I know that there are 2 types of 3 phase windings and one is a little strang but I don't think that one is used much any longer and please , anyone, correct me if I am wrong!!! just be sure to use the correct breaker when you wire it. SAFETY first and fore most.............

you can use three phase...just make sure you alternate phases and use the correct voltage elements. it'll work fine
