Panman, It would help if you could ask more specific questions. If you are totally new to electronics and wiring you might need to find someone to help you with this aspect. As these ovens typically use 120 and 240 VAC there is a real danger involved if they are not wired correctly.

Lookup some of the wiring diagrams posted here and see if that doesn't help get you started.

Hello PANMAN, it is a very daunting task if you are like me and a totally no good with electrics. i can symathise with you as i searched and searched and by the end i was still not sure what all the 'Electric Speak' meant to me, don't get me wrong i understood what a PID,SSR etc now do but there is too much technical jargen it puts you off.
there are a lot of experts out there who can help and simplify the jargon for you, even PM'ing them if you are not happy asking on the forum (which i would encourage you to do)
i have my donor parts to fit this weekend, which i am lucky i have an electrician at hand for that, i am really happy i have took the plunge to start and make my own instead of hope one came for sale or even ask if someone can make me one.
i am in the UK but i have wiring Diagrams from the US that king people have emailed me.
check your PM's as i have asked for your email so i can send them to you if the persons who sent me don't object.
take care and good luck.
Brian
