Contactors are independent of the PID so most any of sufficient capacity will work. If you are going to use this schematic then you need a 2 pole contactor with 120 vac coils and of sufficient capacity to manage your elements.

I personally use an SSR so I wouldn't recommend any specific one. Look at the first sticky on this forum for some suggestions.

can the tet612 be used to bring up to temp, in this case boiling point, and then maintain temp for set period of time, say three hours and shut down automatically, can it be used for a timer while it maintains set point.

No, I am pretty positive the Tet612 does NOT have ramp/soak functions.

The easy answer there is "you get what you pay for". The cheap ones most always do not have RAMP/SOAK. I believe I noticed in another post that you bought a 1/32 DIN Model: SYL-1512A. At the Auber Instruments site here:
PID Temperature Controllers : auberins.com, Temperature control solutions for home and industry you will see 2 of them listed with Ramp/Soak at $89.95 each. One uses an SSR output while the other uses a relay. There are many manufacturers of PID's and they can cost hundreds of dollars...
    Hope that helps,
