Default Restaurant convection oven for curing?

We were getting ready to build an oven, but I've got a line on a restaurant convection oven for really cheap.

I know they circulate a ton of air, but will that affect the powder on the part? I guess I can always rig up a resistor to bump the speed of the fan down if need be, but it would be a lot nicer to plug and play.

i am using a bakery oven. yes the air circulation is too strong , different ways to solve this small problem ,you can slow down the motor , change the motor , replace or modify the fan blade or obstruct part of the air intake .
imo. once this problem solved that makes a very good curing oven ,if you have a good price on it go for it . it is a much easier way to go then to build one from scratch
note : not all comercial ovens run on the same voltage and some are single phase others are 3 phases .might have to have it rewired or buy a transformer to adapt it to your electrical supply

Yep, it is a single phase one. I don't want to have to go any rewiring, that's just a pain I don't want to deal with.

I'll just slow down the motor, that would be easiest for me.

electrical motor repair shop owner told me that you can not reduce the speed of the motor without causing problems to the motor itself.
that would apply to ac motors only ,dc motors are not a problem.
i don t know if this is true.in my oven i shaved off the fins on the fan

I just bought a motor and fan (squirrel cage) from an electric motor repair shop and the ole timer told me that if the fan was moving to much air, just block the intake and it will slow the motor down and won't hurt the motor and actually make it last longer.

Go figure. If mine runs to fast, I will take his word, as he is a repairman for electric motors. Just goes to show you, there is always more then one opinion on everything. So what's a guy supposed to do

Unless it is an air cooled fan and then it will overheat due to lack of cooling!

You can lower the speed of a motor with resistors, my grandfather is an electrician and we've done it a few times with no problems at all.
