The controler fires-off the relay and the relay powers the elements on the high-side.
IE: 110-volt coil swithing on 220-volts to power the elements that are all wired in parallel on the relay...
If the temp goes above the temp setting the controler shuts off the relay and they start to cool, when it goes below the temp (range) that is set the controler fires the relay back on again and the elements start to glow and the cycle starts all over again.. heating, cooling, heating, cooling...
On a bread oven its a 5 to 10 -degree "range" before the controler kicks ON or OFF again.., But also consider that in a bread oven there is another element in a pan heating up water to create moisture so the bread is "proofed"
